Mashed potatoes are one of my favorite additions to any cozy home meal or holiday roast dinner. Potatoes are such a versatile ingredient that I often joke that if I had to live off of one food for the rest of my life, it would be potatoes. As a vegetarian who occasionally abstains from meat, I find that potatoes are a fantastic way to add substance and flavor to meals. They can be prepared in numerous ways, making them a perfect addition to any recipe.

I use a simple classic mashed potato recipe, which is perfect for the mash on top of my shepherd’s pie. However, I double up the recipe when using it as a topping for the pie. When entertaining a crowd and preparing mashed potatoes as a side, I typically work off one potato per person as a guide to estimate the quantity needed.

Instructions:
- Rinse the potatoes under water and then peel them
- Cut the potatoes into small, evenly sized chunks.
- Place the potatoes in a large pot and add enough cold water to cover them by about an inch
- Bring the water to a boil and reduce the heat to medium-low. Simmer the potatoes until they are tender when pierced with a fork, about 15 minutes.
- Drain the potatoes in a colander and return them to the pot.
- Add the milk and butter to the pot and use a potato masher to mash the potatoes until they are smooth and creamy.
- Season the mashed potatoes with salt and pepper to taste. Serve hot.
