ROXIE CAPPELL APPETITE

Still Eric’s Favourite Chocolate Cake

Get ready to be blown away by this cake recipe. Once you try it, you’ll become an instant fan, eagerly requesting my husband to bake it whenever you visit. Trust me, it’s that good.

I have to admit, serving this cake while still slightly warm is heavenly. The moist, tender crumb practically melts in your mouth, bringing pure bliss with every bite. And don’t worry if you have any leftovers — the cake is equally divine the next day, allowing you to enjoy its delightful essence a little longer.

This recipe holds a special place in our hearts as it was originally crafted by my talented mother-in-law for my husband when he was a child. Over the years, my husband has perfected the measurements to suit his taste. The secret ingredient that takes this cake to the next level is sour cream. It adds a tangy flavor and contributes to the cake’s irresistible texture, making it truly scrumptious.

For the best results, make sure the baking soda is fully dissolved in the sour cream before adding it to the batter. This simple step ensures a flawless outcome, with each slice being pure perfection.

So get ready to experience the magic of this cake. Once you try it, you’ll understand why it’s a family favorite. Don’t forget to share your creations with us by tagging @roxiecappell in your photos.

Ingredients

Instructions:

  • Preheat the oven to 350°F.
  • In a mixing bowl, combine the softened butter, sugar, eggs, and vanilla extract. Use an electric mixer to beat the mixture until it becomes light and fluffy.
  • Dissolve the baking soda in the sour cream, ensuring it is fully integrated. Add the sour cream mixture to the batter and continue mixing until well combined.
  • In a separate bowl, whisk together the flour and baking powder. Gradually add the mashed banana and dry ingredients to the batter, alternating between the two. Mix thoroughly until everything is beautifully incorporated.
  • Gently fold in the chocolate chips, ensuring they are generously distributed throughout the batter.
  • Transfer the batter into a generously greased 9×9 inch baking pan, ensuring it is evenly spread.
  • Place the cake in the center of your oven. Let it work its magic for approximately 40 to 45 minutes. To ensure even baking, rotate the pan halfway through.
  • Once the cake is a beautiful golden hue and a toothpick inserted into the center comes out clean, it’s time to remove it from the oven. Allow it to cool slightly, before enjoying.
